New Year’s Resolution: Fewer Dishes!
Love to cook but hate to wash up? We all know the feeling, which is why one-pan recipes should be your go-to for when time is of the essence, or, when you just don't fancy much washing up!
One-pan tomato fish chowder
Heat the oil in a deep saucepan and gently fry 500g vegetable soup mix for 10 minutes over a medium heat until softened. Add 600ml passata and 500ml vegetable stock to the pan and bring to a steady simmer. Stir in 400g cannellini beans, then add 4 haddock fillets. Cover and simmer for 4-5 minutes until the fish is cooked through and starting to break into chunks. Scatter with basil leaves and serve.
Garlic and parsley roast chicken with crunchy purple sprouting broccoli
Heat the oven to 220°C/200°C fan/gas 7. In a small bowl, combine 40g unsalted butter with 3 garlic cloves and half a bunch of chopped parsley. Season well.Take 4 chicken thighs, loosen the skin a bit on each one and work some of the butter mix under, rubbing any leftover butter on top. Season well, then put in a roasting tray and roast for 30 minutes. After 15 minutes, trim 350g purple sprouting broccoli and toss with 1tbsp of olive oil and salt and pepper in a baking tray, then roast for 10 minutes. Mix 20g breadcrumbs with the zest of 1/2 lemon and half a teaspoon olive oil. Scatter over the broccoli and roast for 3 minutes more. Serve the roast chicken and broccoli with buttered new potatoes, steamed rice or pasta.
Toffee apple pan crumble
Heat the oven to 190°C/170°C fan/ gas 5. To make the topping, rub together 225g plain flour and 150g unsalted butter in a large bowl until it resembles breadcrumbs. Stir in 75g brown sugar and a handful of hazelnuts, then set aside. In the frying pan, melt the 80g butter and 80g granulated sugar with the 1 split vanilla pod or paste, shaking the pan to swirl the mixture together as a caramel. Cook for 2-3 minutes, then add 4 chopped bramley apples and coat in the caramel. Cook for 8-10 minutes more until the apple turns golden. Sprinkle the crumble topping over the apples, then transfer the pan to the oven and bake for 25 minutes. Serve with cream or ice cream.
